However, the fast and cheap calories from the modern high carbohydrate diet are absorbed rapidly, so much so that the body does not have anywhere to put the excess energy and stores it as body fat. Secondly, a faster, cheaper and more convenient way to obtain nutrients led to the natural conclusion of excessive consumption. This, coupled with effective advertising as well as a sedentary lifestyle, lead to the pathway of increased obesity related medical diseases we face.
To put simply;
1. increased food intake
2. easy absorption of simplified nutrients, which are broken down during cooking/manufacture
3. reduced physical activity in this day and age.
Leads to obesity and its related medical issues.
With the increased presence of nutrients but the lack of anywhere to use it except as storage, this could lead to the possibility of increased expression of oncogenes.
Furthermore, this is doubly complicated by the invention of the light bulb and entertainment that keeps us up late in this day and age. This doubles down to increase hunger at night since the body is still awake, the stomach craves another meal, as sufficient number of hours have passed since the person has eaten. Another cause of hunger could be the brain cells satisfaction areas not functioning well due to the lack of sleep. Ever notice the brain doesn't function well when sleep deprived? Also, the body's restorative ability to prevent cancer would be severely affected.
There needs to a nutrition improvement in meals and snacks.
The transition from science to application for revolutionizing our diet would face several hurdles. One hurdle would be major food industry players who are comfortable with the current status quo of commercialized food. Given the chance to risk the golden goose might make food executives uncomfortable.
Another such hurdle would be flavor and familiarity. We like our foods. For example, bread is familiar and tasty, when toasted and dripping with butter and honey (if you like toast, and dripping butter with honey). That, or toasted honey nut bread, mmmmMMMm. I do like nuts a lot, even better with real honey.
To transition our diet away from popular milled flour, potatoes crisped as either potato chips or fries, would cause dissension; as i discovered when I suggested my wife we stop eating bread. As I recall, she stopped cold in mid sentence as if I had suddenly grown a horn like a unicorn. Or a rhinoceros.
An oft said phrase goes, the way to a man's heart is through his stomach, and the wife does try to please me by cooking food that she knows I would like. Since most of this would be paired with rice, or some variation of rice porridge, rice and curry stew or rice with soup, we have an unusually simple diet, a major food portion consisting of simple carbohydrates and meat.
Perhaps we should have more fruits and vegetables in the diet. With a focus on plant fibers that aren't easily digested so they sit longer and we aren't hungry again so quickly.
The challenge then is making the high fiber diet of less processed food more palatable, especially to picky eaters such as young children.
(That said, the wife has to remind me not to eat food that is on her plate).
